This has been my go-to lately 👇🏼

Throw into a bowl (or Pyrex):
• 120g Greek yogurt
• 1 egg
• ~80 ml milk of choice (I used unsweetened almond milk)
• 30g flour (I used low carb, but regular, oat, almond, or whatever you have on hand works too)
• Sweetener of choice (I used powdered monk fruit)
• Blueberries or chocolate chips (I did half and half 🍫🫐😌)
• A little baking powder

Mix it well (fork is fine, or use a blender if you want it smoother),
pour into a lined dish, bake at 350° for 30 min

Hot, simple, high-protein… and yes, you can eat it with one hand 😅

Also—real life, I’m not holding him 24/7. When he’s not extra fussy, these are a few things that help me actually get this done without losing my mind.

A simple high-protein blueberry cheesecake made in the blender and baked in the air fryer. Creamy, light, and packed with protein.

Ingredients
• 1 cup cottage cheese (225 g)
• ½ cup Greek yogurt (120 g)
• 1 scoop vanilla whey protein (≈30 g)
• 1 whole egg
• liquid egg whites (30 g)
• ½–1 tsp vanilla extract
• sweetener to taste
• ½–¾ cup blueberries (75–110 g)
• pinch of salt

Bake
Air fryer 275°F • ~35 minutes.
Cool and refrigerate before slicing.
