Balsamic Roast Beef Dips

This is a family favorite! I make this several times a month. So simple because it cooks all day in the crockpot for the perfect weeknight no effort meal!

3-4 Ib Sirloin Tip Roast
1.5 cup red wine
1 onion slices
2-3 tablespoon balsamic vinegar
2-3 tablespoons soy
1 cup water
1 TBS minced garlic
3-4 sprigs thyme & rosemary
Salt & ground pepper
Crusty rolls or baguette
Cheese - optional but recommend

Place meat in crockpot. Add wine, soy, balsamic, garlic, herbs & onion and cook low & slow 6-8 hours.

Once roast beef has cooked, remove from slow cooker. Break apart with two forks

Cut your baguette. Top with shredded beef & cheese. Toast in oven until rolls are crunchy and cheese is melted. Serve with cooking juices for dipping.

Baking season is upon us!

If you’ve ever spiraled because of any of these things I feel you. I had a fill blown cry session just yesterday about the PTSD with my one year date from discovering my cancer looming and some bladder irritation happening. Any small thing sends me into my “what if” thinking spiral. 🌀 

Here are some tips for when you experience these feelings. 

We can’t control how our brain and body feel and process trauma but we can do things to make it easier..

Reoccurrence- remind yourself that you are safe and focus on what is in your control - nourishing foods, movement, and less stress.

“Who am I” - this one is hard after cancer treatment. Try new things. This is your chance to truly rediscover what lights you up and is worth your time and energy. Be picky 

Fatigue and lack of motivation - you’re healing give yourself grace. Move slowly and with intention, allowing yourself to rest without guilt. Celebrate all the little wins. Getting up and dressed counts! 

Food fear - focus on making mindful choices not perfect ones. Don’t live in fear. Life is meant to be lived and enjoyed. I follow the 80/20 rule. Give yourself space to still enjoy life and treat yourself 🫶 you don’t have to be perfect all the time. Consistency > perfection. 

Side effects - every single one of us is unique and will handle treatment differently. Don’t compare yourself to anyone’s else. Communicate with your doctor when you have concerns or questions.You’re not meant to suffer
through it. It’s ok to ask questions. Be sure you’re  your getting plenty of rest, hydration, and good nutrition.

Aches and pains - my rule is to always error on the side of caution after cancer treatment. You can’t be too careful and you are your own best advocate. Listen to your body. Contact your care team if you’re worried about something. Don’t suffer and stew on it. Get it checked, but also remind yourself you are safe. Take a few deep breaths and center yourself.

This recipe is a family favorite! Simple to make and the perfect fall 🍂 meal. 

Serve with a salad 🥗 crusty bread 🥖 and dinner is done!👏

You’re going to want to save this!

Ingredients:

1 Lb of gnocchi
1/4 Cup of unsalted butter
3 carrots, diced
2 Celery stalks, diced
2 Leeks, thinly sliced
1/2 Yellow onion, diced
4 Garlic cloves, minced
1 TBS of fresh rosemary, minced
1 TBS of fresh thyme, minced
1 TBS of fresh sage, minced
1 Teaspoon of salt
1 Teaspoon of freshly cracked pepper
1/3 Cup of all purpose flour
2 Cups of vegetable broth
1 - 12oz. bottle of pumpkin beer ( or regular beer and 1/4 cup pumpkin puree) 
1 Cup of half & half
1 Cup of whole milk
1 Lb cheddar cheese, shredded Pumpkin 🎃seeds for serving

In a large pot (I used my instapot) melt butter on medium heat until bubbly. Add in carrots, celery, leeks, onion, and garlic cloves.

Sauté vegetables for 10-15 minutes or until softened. Add in salt, pepper, herbs, flour and stir well.

Slowly add in vegetable broth, beer, half & half, milk and gnocchi and stir gently.

Bring mixture to a simmer. Add in shredded cheese and stir until melted.

Serve topped with pumpkin seeds and crispy bread for dipping & ENJOY!🌿

I started optimizing my hormones almost two years ago at 55  and I wish I had started earlier. I would have suffered a lot less.

I do this for my heart, brain, bones, joints, skin, sleep, mood and mental health. 

My current complete routine includes estrogen gel -  recently switched as the patch wasn’t absorbing as well for me personally. Every body is unique and individual. You may have to try a few different modalities and doses before you get it calibrated perfectly for your system! 

Progesterone - I sleep like a baby. Great calming effect 

Vaginal estrogen - chapstick for “down there”

Low dose Testosterone for energy boost and libido 

Estrogen face cream - (@myalloy ) for fine lines, wrinkles, boost collagen production and to help my skin stay well moisturized

There was a time I thought health was:

- Low-calorie everything/ under eating
- Hustling through exhaustion
- Suppressing my emotions thinking I was being strong dealing with things myself. 
- Prioritizing being busy over being present 
- Trusting products just because they said “clean”
- Acting like I was so healthy even though my diets & habits weren’t that great nor was my mental health
- Occasional alcohol use that always made me feel like crap. 
- Eating processed foods
- Staying up all hours of the night doom scrolling 
- Putting myself last
- Being everything to everyone and leaving nothing for myself. 

Turns out... In really I wasn’t as healthy as I thought I was …Hence kidney cancer..

I was in literal survival mode for years just hanging on for dear life doing the best I could.

The kidney cancer diagnosis rocked me and forced me to take a deep look at how I was actually living and reevaluate what “health” actually looks like in practice. 

“Healthy” now means:

- Keeping my nervous system regulated 
- Minimizing stress and anxiety 
_ Prioritizing myself / putting myself & my needs FIRST 
- Eating real food / getting all my protein, fiber, healthy fats & carbs
- Rest without guilt / getting 8 hours minimum sleep a night 
- Quitting alcohol and processed meats 
- Setting boundaries that protect my peace 
- Moving my body daily in ways that feel good - walking and strength training to keep my bones, brain and heart strong 
- Counseling to gain coping skills to manage my stress and anxiety 
- Giving myself loads of grace

What I thought was wellness... was actually self sacrifice. Putting everyone else before myself was slowly killing me inside and out. 

Now I choose myself first, movement , nourishing food, grounding, good sleep, sunlight and happiness 

Real healing happened when I ate foods that fueled my body, allowed myself to rest guilt free & listened to my body. 

Be sure your listening to your body! 🫶

My favorite muffin pan! Perfect for  meal prepping egg bites, muffins or cupcakes! 

My easy egg bite recipe: 
8 eggs or egg whites
3/4 cup cottage cheese
Salt & pepper 

Blend in blender. 

Pour into your silicone muffin pan. Top with shredded cheese. Bacon bits, anything you like!  L (spinach, bell pepper, ham or pancetta, other types of cheese)

Bake at 350 for 15-18 min.

It wasn’t just one thing—it was many...(and by the way this song hits different as a cancer survivor⚡️)

After my left kidney was removed, the real healing began. I didn’t have chemo, immunotherapy or radiation. Kidney cancer is chemo resistant. Surgery was my only treatment. But that didn’t mean I was done. It meant I had to take full ownership of my healing moving forward. 

I researched everything. I talked to doctors, my urologist, my nephrologist, my therapist. I read books, listened to podcasts, changed my diet, moved my body with intention, and focused hard on eliminating stress and calming my nervous system.

I didn’t just fight to survive—I fought to live my life to its fullest & thrive

To feel strong. To feel calm. To feel whole.

No one gave me a perfect answer. So I became my own advocate. And you can too.
