Lemon Goat Cheese Veggie Egg Casserole 350°F | 35–45 min | 9x9 dish Ingredients 10 eggs 1/4 cup heavy cream Zest of 1 lemon 1 cup chopped peppers ½–¾ cup diced onion 2 cups spinach 4 oz goat cheese Butter (for dish) Salt + pepper Directions Butter dish. Preheat to 350°F. Sauté onion + peppers 5–7 min. Add spinach to wilt. Whisk eggs, cream, lemon zest, salt + pepper. Spread veggies + goat cheese in dish. Pour eggs over. Bake 35–45 min until just set. Rest 10 min.
