This egg dish is my go to breakfast and it’s packed with veggies (fiber!) and protein which help regulate our nervous system.

Sharing here the recipe and low-tox cookware I use to make sure plastic and other chemicals aren’t sneaking in my food to mess everything up.

Lemon Goat Cheese Veggie Egg Casserole

350°F | 35–45 min | 9x9 dish

Ingredients
10 eggs
1/4 cup heavy cream
Zest of 1 lemon
1 cup chopped peppers
½–¾ cup diced onion
2 cups spinach
4 oz goat cheese
Butter (for dish)
Salt + pepper

Directions
Butter dish. Preheat to 350°F.
Sauté onion + peppers 5–7 min. Add spinach to wilt.
Whisk eggs, cream, lemon zest, salt + pepper.
Spread veggies + goat cheese in dish. Pour eggs over.
Bake 35–45 min until just set. Rest 10 min.
Pre-freeze then store in container separated by parchment paper

Switching my closet over to low-tox materials has been a process, but such a worth-it one.
