I'm going to introduce you to a favorite soup in our house! Otto requested this soup the other day and I figured I would share it with you. The kids call it “Stanley Special,” but I’m pretty sure it’s just a simple Italian sausage white bean soup. I started making this years ago, inspired by one I think they have it Olive Garden, but this version is dairy free. You can also do it with potatoes instead of beans, but this one is so easy because everything comes from a can.😂 2 pounds of Italian sausage (pork or turkey, though pork is better for sure) 2 onions 3-4 cloves garlic 3 cups broth 2 cans white beans 2 cans diced tomatoes 1/2 bag spinach Parmesan for serving I am all about efficiency, so I always use this meat chopper thing instead of a spoon to break up ground meat! I also hate the smell of garlic on my fingers but I have broken many a garlic press before and they are so hard to clean, so I use this great rocking one. Linking both these tools in my LTK. Cook for like 30 minutes and it’s done! I add a little parmesan on top because we are low dairy over here. Save us for later and let me know if you try it!
