Who knew chocolate chips could make such a huge difference? It's super fluffy, light, and full of ube and chocolate flavor. And you see that deep purple color?? 😍 Only 5 ingredients and 25 minutes in the oven. Just make sure you eat it as soon as you can handle it because it starts deflating pretty quickly. That's the best part though, when it's warm and pillowy with melty chocolate chips inside. Would you try it? Let me know in the comments what you think if you do! 🙌 INGREDIENTS 3 egg whites 2.5 tbsp sugar 1 tsp ube extract 1 tbsp corn starch mini chocolate chips (to taste) INSTRUCTIONS 1️⃣ Preheat the oven to 300°F. 2️⃣ In a medium mixing bowl, add the egg whites and beat with an electric hand mixer until large bubbles start to form. 3️⃣ Add the sugar and ube extract and mix until small bubbles form. 4️⃣ Add the corn starch and mix until you get stiff peaks. 5️⃣ Dump in the mini chocolate chips and gently fold them in with a silicone spatula. Don't overdo it or the meringue will lose its fluffiness. 6️⃣ Line a baking pan with parchment paper and use a silicone spatula to pile the mixture on. Shape it into a dome. 7️⃣ Bake for 25 minutes.
