These cheesy rice cakes are ridiculously good. It's not just the tasty sweet and spicy sauce, but the rice paper gets crispy on the outside, chewy on the inside, AND you get gooey melted mozzarella in the middle. My tastebuds can't even believe what's happening 🤯 The best part is they're made with rice paper and string cheese. That's it. No actual rice cakes needed. You just roll them up, skewer them, and pan fry until crispy. Then coat them in that gochujang sauce and try not to eat them all in one sitting. Or eat them all in one sitting. Let me know in the comments what you think if you do! 🙌 INGREDIENTS 6 sheets rice paper 3 string cheese (cut in half) water toasted sesame seeds (to taste) SAUCE 1 tbsp gochujang 1 tbsp ketchup 1 tbsp sugar 1.5 tbsp rice syrup 1 tbsp water 2 tsp soy sauce vegetable oil (for frying) INSTRUCTIONS 1️⃣ Cut the string cheese in half. 2️⃣ Fill a dinner plate with water. Dip a sheet of rice paper in and wet both sides. Place it on a cutting board and once it's pliable, place half a string cheese near the edge. Roll it a few times, fold in the sides, and roll the rest of the way up. Repeat for the remaining sheets. 3️⃣ Slide 3 rice cakes onto each of two skewers. 4️⃣ Add a little vegetable oil to a pan over medium heat and place the skewers in. Cook each side for a few minutes until crispy on the outside and a little squishy, which means the cheese has melted. 5️⃣ While they cook, mix all the sauce ingredients together in a small bowl. 6️⃣ Transfer the rice cakes to a plate. Turn off the heat and pour the sauce into the pan so it bubbles up and thickens slightly. Use a spatula to mix it a little.
