Onigiri was one of my favorite snacks growing up. My mom used to make plain lightly salted rice balls for me, and now I love experimenting with all kinds of variations. This kimchi gochujang version with melty mozzarella in the center is SO good 🔥 Air frying is the easiest way to get crispy onigiri that's perfectly crunchy all the way around. Pan frying can be tricky because the rice ball sometimes loses its shape or crisps up unevenly. The air fryer just does it better here. Would you try it? Let me know in the comments what you think if you do! 🙌 INGREDIENTS 2 cups cooked short grain white rice 3/4 cup kimchi (finely chopped; squeezed) 4 tbsp gochujang 2 tbsp sesame oil 2 tbsp sesame seeds 1 tsp soy sauce 2 tsp honey (optional) 1 cup shredded mozzarella sesame oil (for brushing) 1 sheet sushi nori (cut into strips) INSTRUCTIONS 1️⃣ In a large bowl, mix together the rice, kimchi, gochujang, soy sauce, and sesame oil. Add the honey if you want a touch of sweetness. 2️⃣ Using a mold or lightly oiled hands, form the rice into balls with shredded mozzarella packed in the center. 3️⃣ Brush lightly with sesame oil and air fry at 375°F for 10 minutes.
