If you've been following along, you know I love making mochi things, and these purple sweet potato mochi buns are AMAZING. They're subtly sweet from the potato and savory from the melted cheese, with that incredible chewy center 😋 The sweet rice flour is what gives them that stretchy, mochi texture. I like using mozzarella, and baked purple sweet potato works best for the deepest flavor. Would you try it? Let me know in the comments what you think if you do! 🙌 INGREDIENTS 2 cup sweet rice flour 1 cup cooked purple sweet potato (baked) 1 cup shredded mozzarella 1/4 cup coconut oil 1/4 cup coconut milk 1 egg 1/2 tsp salt INSTRUCTIONS 1️⃣ In a large bowl, combine all the ingredients and mix until the dough is smooth. If the dough is too dry, add 1 tablespoon of coconut milk and knead it in. Repeat if necessary until it’s no longer dry. 2️⃣ Shape the dough into small round buns and place them on a lined baking sheet. 3️⃣ Bake at 350°F for 20 minutes. 4️⃣ Enjoy! LTKfoodie LTKHome
