Turning my favorite childhood cereal into an indulgent cookie🌈 . Ingredients: * 1 cup of unsalted butter, room temperature * 1 cup of packed brown sugar * 1/4 cup of granulated sugar * 2 large eggs * 1 tablespoon of vanilla extract * 3¼ cup of all-purpose flour * 1 teaspoon of cornstarch * 1 teaspoon of baking soda * 1 teaspoon of salt * 1 cup of Lucky Charms cereal, marshmallows too * 2 cups of white chocolate chips * 1/2 cup reserved Lucky Charms marshmallows Instructions: 1. Preheat the oven to 410°F. Line two cookie sheets with parchment paper or grease them with cooking spray.�Set aside. 2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter for about 3 minutes. 3. Add the brown sugar and granulated sugar, and mix until well incorporated, light, and fluffy-about 3 minutes. 4. Beat the vanilla extract and eggs into the butter mixture until well incorporated. 5. Add in the flour, baking soda, cornstarch, and salt, and mix until well incorporated. 6. Lastly, add the white chocolate chips and Lucky Charms cereal and mix on low until well incorporated. 7. Using a cookie scoop or large tablespoon, form the dough into balls of about the size of a tennis ball. Roll each ball in your hand to form a sphere shape. 8. Place each completed cookie dough ball on the baking sheet, about four inches between each. About six per tray. 9. Bake for 10-11 minutes or until just golden brown. 10. Remove from the oven and immediately press into the warm cookies the reserved marshmallows. 11. Cool fully on the cookie tray.
