Taco burgers 🍔🌮

This is the perfect way to use up leftover burger buns, hamburger buns and burger meat you have in your freezer forwards the end of summer! ☀️ 

15 burger buns or 12 hot dog buns or a mix
2 lbs burger meat or ground beef
1 to 2 bags of taco spice, depending on how spicy the mix is and how much spice you want. I used 1 package @sietefoods 
1 cup shredded cheese, you can use whatever you have but I used Mexican blend
4 slices cheddar cheese. Use whatever sliced you have at home or sub for more shredded cheese
1/4 cup salsa
Handful of tortilla chips, crushed

1. Lightly coat a sheet pan with olive oil spray. Arrange the bottoms of the burger buns in an even layer and sprinkle with 1/3 cup shredded cheese.

1. In a large skillet, cook the burgers or ground beef over medium heat, breaking it apart as it cooks. About halfway through, stir in the taco seasoning and continue cooking until fully browned.

2. Spoon the seasoned beef evenly over the bun bottoms. Top with salsa, sliced cheese, crushed tortilla chips, and the remaining shredded cheese.

3. Place the top buns over the layers, then lightly spray them with olive oil. Set another sheet pan on top, pressing down gently. Bake for 10–15 minutes, or until the cheese is melted and the buns are golden and slightly crisp.

I love a 5 minute prep meal that tastes this good and  the whole family will eat! If there’s anything left after serving this dish does great as meal prep too.

Ingredients ✨ 
1 lb (16 oz) rigatoni, uncooked
2.5 cups chicken broth
1 jar (16 oz) Alfredo sauce
7 oz pesto 💚
12 oz chicken sausage 
2 cups shredded mozzarella cheese 🧀 
1/4 cup grated Parmesan
Salt + pepper, to taste

Directions 🗺️ 
1. Preheat oven to 375°F.

2. In a large 9x13 baking dish, dump in Alfredo sauce, pesto, and chicken broth. Stir, and pour in uncooked pasta. Stir until pasta is coated and liquid is evenly distributed.

3. Mix in 1 cup mozzarella, season with salt and pepper

4. Sprinkle the remaining mozzarella on top along with Parmesan cheese 🧀 

5. Cover tightly with foil and bake for 35 minutes. Remove foil and bake uncovered for another 10–15 minutes, until pasta is tender and top is golden bubbly. You can broil the last few minutes. 

7. Let sit 5 minutes before serving.
Okayy this snack/breakfast/dessert is seriously addicting and is SO easy to make. Definitely a new go to snack!

1 tbsp coconut oil
1 banana
1/3 cup oats
1/2 tsp cinnamon 
1 tbsp honey 
1 cup of greek yoghurt
1-2 tbsp peanut butter 

1. Slice a banana and add to a pan in coconut oil over medium heat. Sprinkle cinnamon over banana, and add the honey to the pan. Mix and let cook for 1-2 minutes. Add oats and let cook for a few more minutes.

2. Serve over yoghurt and drizzle with peanut butter

Hardest part about this dish is babysitting the onions while they caramelize, otherwise it’s super easy to make and the taste is 10/10 ⭐️ 

10 oz (284g) ribeye steak. Cut up into bite size pieces
3 tbs butter
Olive oil
Salt and pepper 
3 yellow onions, sliced 
2-3 tbsp balsamic glaze
2/3 lbs (300g) spaghetti 
1/2 cup white wine
1 to 1.5 cup reserved pasta water
0.75 cup heavy cream
2 tbsp grated Parmesan 
2 tbsp parsley, chopped 

1. Heat up a large pan on the stove over medium heat. Once hot, add 1 tbsp butter and some olive oil. Once melted, throw in steak. Season with salt and pepper and cook 2 minutes per side or until cooked through. Remove from pan.

2. In the same pan, add remaining butter and some olive oil, add onions and season with salt and pepper. Let cook on low heat for 20-25 minutes until almost fully caramelized. Stir a lot to make sure onions don’t burn or stick to pan. After 20-25 minutes, add balsamic glaze to pan and stir. Cook for another 5 min. Remove from pan.

3. While onions are being caramelized, add water to a large separate pot and add spaghetti. Cook until al dente.

4. To the same pan, add wine and heavy cream. Stir, scrape the pan, and add 1 cup of water form the pasta, add Parmesan and stir. Add parsley, stir, then add back onions and steak. Stir, then add spaghetti. Stir everything to make sure pasta is covered in sauce. Add more of the pasta water if necessary to keep the sauce sauce-y

Spinach and artichoke orzo dinner 🥘

Both my kids loved this and so will you since it’s one tray dinner that literally takes 5 minutes of prep. The oven will make this into the creamiest yummiest dinner you’ll have all week!

1 lbs orzo pasta
12 oz chicken sausage (I LOVE this cheddar one from Trader Joe’s)
1 cup baby spinach
1.5 cup cherry tomatoes 
1 spinach and artichoke dip from @traderjoes or wherever you can find one. Room temperature. You can place the dip in the fridge overnight or for a couple of hours. 
3 cups chicken or vegetables broth

1. Add orzo, chicken sausage, tomatoes and spinach to an oven safe tray. Place dip in the middle, cover with broth and drizzle with olive oil (optional). Add salt and pepper.

2. Bake in oven at 375F for about 30 minutes until pasta is al dente. Remove from oven, mix everything and serve!

Caramelized onion and Boursin pasta 🧅

Olive oil
2 tbsp butter 
3 yellow onions, sliced 🧅
2 tbsp balsamic glaze
1 Boursin cheese
1/4 parmesan cheese, grated
1/2 cup reserved pasta water
1/2 lbs spaghetti

1. Add olive oil to a large pan over medium heat, along with the butter. Let melt, then add onions. Add salt and pepper. Cook for 30-40 minutes, start off with medium heat then turn to low. Stir often. Once almost fully caramelized and golden brown, add balsamic glaze and stir.

2. While onions are cooking, boil water and cook spaghetti until al dente. Reserve some water.

3. Add Boursin cheese and thyme to onions, let melt and stir to combine with onions. Add pasta water and cheese, stir to coat pasta. Salt to taste, and serve 🍽️
I made the creamiest most delicious eggs ever this morning by combining these ingredients in the oven. Seriously so good, Boursin cheese really goes well with anything.

1. Add arugula, spinach, cheese and eggs ingredients to a deep oven safe glass dish. 

2. Bake in oven at 375F for about 20-30 minutes depending on how runny you like your eggs. Take the dish out and mix to combine everything. Season with salt and pepper, and drizzle with olive oil.

- If you take them out and mix everything and find that it’s too runny, just pop them back in the oven for a few minutes

I am a big ranch lover and adding it as a spice to a this simple meal really makes for a flavorful and delicous weeknight meal! You’ll only need 5 ingredients for this and it comes together in no time!

12 oz small potatoes @littlepotatoco 
1 lbs chicken thighs, bone and skinless
Olive oil
1 tbsp ranch seasoning @harmonyblends 
8 oz bacon @appellate 
8 oz garlic feta dip @aldiusa or any kinda dip you have. Alternatively add some sour cream and feta cheese 

1. Cut up potatoes in smaller pieces, mix with chicken thighs in a bowl with some olive lol and ranch seasoning.

2. Spread out over a cooking sheet, and bake in the oven at 400F for 20-25 minutes until the potatoes are soft and the chicken is mostly done. Remove from oven.

3. Spread out bacon over potatoes and chicken, top with dip, and bake for another 10-15 minutes until bacon is crispy. Eat!

think everyone remember the viral baked feta and cherry tomato combo that broke the internet.  There’s something pretty amazing about that sweet savory tangy combo, but there’s no reason pasta should be the only one having fun. I love making this with eggs too 🍳 perfect for breakfast or brunch! 🍅 

12 oz cherry tomatoes or sliced larger tomatoes
8 oz feta cheese. I used a tomato basil one otherwise add some spices, basil/oregano + salt
8 eggs
Olive oil 

1. Add cherry tomatoes to an oven save tray, along with feta cheese. Drizzle with olive oil, and bake in the oven at 400F for 20 - 25 minutes.

2. Remove from oven, crack eggs over tomatoes, and bakes until egg whites are set, ~6-10 minutes, depending on how runny you like your yolks.

3. Remake from oven and stir to combine everything. Serve with bread or lavash 🫓
Creamy green pasta 🍝

A friend of mine brought me some locally grown zucchini last week and another some pesto made from basil in her garden 💚 I decided to use them making a sauce for pasta and it turned out deliciously! My kids ate this and they had no idea it had a ton of veggies hidden 🙊

1 very large zucchini or 2-3 medium ones
2/3 lbs pasta - I used @delallofoods farfalle 
4 cups chicken broth
1/2 cup cream
1/4 cup Parmesan cheese
1/4 cup pesto 
12 oz (240g) chicken sausage

1. Wash zucchini and slice up into smaller pieces. Cut up chicken sausage into bite sized pieces. Add both zucchini and sausage to a sheet pan, seperatley. Drizzle olive or avocado oil over zucchini and mix. Bake in oven at 400F for about 25 minutes, or until sausage is cooked and crispy and zucchini is roasted.

2. Remove from oven and mix zucchini in a blender or food processor, along with 1/4 cup of the cream. Blend until smooth. 

3. In a large pan, add some olive and then your pasta. Toast and stir for a minute before adding broth. Cook for 10 minutes or until most liquid has been absorbed. 

4. Once almost all liquid has been absorbed, add puréed zucchini, pesto, remaining cream, and Parmesan cheese. Stir to combine everything, add sausage or serve on the side. Season with salt and pepper.
Chicken sausage stroganoff 🥘

This is a meal if you want some comfort food but also something quick and easy 🍽️ this dish is creamy, flavorful and ready in no time, less than 30 minutes. Save this for an easy weeknight dinner 🍛

Recipe:
24 oz chicken sausage, I used the cheddar one from  Trader Joe’s
1 yellow onion, diced
6 oz mushrooms, sliced
3 tbsp tomato paste 🍅 
1 tbsp Dijon mustard
1.5 cup heavy cream
3 tbsp soy sauce or coconut aminos
1 cup bone broth or beef broth
Parsley for topping

1. Slice up chicken sausages and cook in a pan in olive oil over medium heat. Cook in batches if necessary, and transfer to a plate once cooked through.
2. Sauté onion in pan for a couple of minutes until softened. Transfer to plate. Do the same with mushrooms. Once mushrooms are cooked for a few minutes, transfer back sausage and onion. Combine.
3. Add cream and broth and stir. Season with salt and pepper. Add to tomato paste, mustard and soy sauce, mix to combine and bring to a boil and cook for 5 minutes. 
4. Remove from heat and serve with basmati rice or egg noodles.
Easy butter chicken 🥘 

This is a simple homemade version of this comfort dish!

A perfect blend of spices, tender chicken, and a delicious tomato and coconut milk based sauce thats served perfectly with naan 🫓 and or rice! 🍚 Let me know if you try this 💛

Serves 6-8
2 tbsp olive oil
2 tbsp butter
2 yellow onions, diced
1 tbsp ginger, minced
1 tbsp garlic, minced
3 lbs boneless chicken thighs, diced into 1 inch pieces. Or chicken breast if you prefer 
8 tbsp tomato paste
8 oz tomato sauce
2 tbsp garam masala - I love @justspices 
2 tsp paprika
15 oz coconut milk
1/2 cup heavy cream 
Toppings: sour cream, parsley, naan 🫓 🌿 

1. In a large pan over medium heat, add oil, butter, and onions and cook for a few minutes until softened. Add ginger and garlic and let cook for another minute before adding chicken. Stir well to combine, add spices, and cook for 5 minutes. Stir often.

2. Add tomato paste, tomato sauce and coconut milk. Stir well, cover, and cook for another 10 minutes or until chicken is fully cooked.

3. Uncover, and add heavy cream. Simmer for another 5 minutes, stirring occasionally. 

4. Serve over rice with naan bread, and top with parsley and sour cream!
Crispy tacos is a new favorite around here and I love that you can customize it so easily depending on what you have at home! For these I used ground beef but you could easily swap the beef for turkey or chicken! 

Olive oil spray 
1 lb ground beef
1 package taco seasoning 🌮 @sietefoods 
8 small corn tortillas
3 tbsp cheddar cheese spread with hatch chile 🌶️ @traderjoes 
1 cup Mexican or cheddar cheese
For serving: avocado, pico de gallo salsa 

1. Cook beef in a pan in olive oil over medium heat, add taco seasoning and mix. Cook until cooked through. 

2. Add a wet paper towel to a large plate, add your tortillas and cover with another soaked paper towel. Microwave for 30-60 seconds until the tortillas are a bit softer.

3. Spray a sheet pan with olive oil and line up the tortillas. Spread cheddar cheese on each tortilla, as well as add ground beef and top with shredded cheese. Carefully fold up each tortilla and spray with olive oil. I placed a wire rack on top, you can also use another pan. Bake in the oven for about 10 minutes at 375F until crisp. Don’t worry if they break! They’re still gonna be delicious.

Made this on a whim the other night and it’s officially in the rotation. So creamy and high in protein, 42 per serving, made with the usual Mac and cheese suspects but also bone broth and cottage cheese 🧀 solid comfort food that will also keep you full!

Serves 3
1 tbsp butter
2 cups of dry pasta of choice, I used shells cause they’re superior ✨
3.5 cups of bone broth
1 cup of cottage cheese
1 cup of cheese, Mexican or cheddar blend 🧀
1/4 cup of heavy cream or milk 

1. Add butter to a hot pan over medium heat. Let melt, then add the pasta. Stir for 30 seconds - 1 minute to just gently toast the pasta.

2. Add hone broth to pan and stir. Cook for about 10 minutes until most of the liquid has been absorbed. While pasta is cooking, add the cottage cheese to a blender or food processor and mix until smooth. Add the blended cottage cheese to pasta, along with cheese and stir to combine. Add cream or milk and stir again, then serve 🍽️

Artichoke chicken bake🍗

If you need a filling and flavorful dinner, try this one out! Super creamy and easy to make, make great leftovers too! I served with about 1 cup of basmati rice and each serving packs 55 grams of protein!

Serves 4

3 large chicken breast, diced into cubes
12 oz artichoke hearts
1 cup cottage cheese
1/2 cup heavy cream
2 tsp minced garlic
2 tsp spices of your liking, I used 1 tsp Mediterranean blend and 1 tsp citrus finishing salt @harmonyblends 
3 tbsp sun-dried tomatoes or sub for 1 cup baby spinach
1 cup mozzarella cheese
1/4 cup grated Parmesan

1. Combine artichoke hearts, cottage cheese, cream, garlic and spices in a mixer or food processor. Mix until smooth.

2. Layer half the sauce in an oven save tray, top with diced chicken and sun dried tomatoes. Add half of the mozzarella cheese, layer with the remaining sauce and top with remaining mozzarella cheese. Top with grated Parmesan. 

3. Bake in oven at 400F for 45-50 minutes. Broil for 2-3 minutes on high. Remove from oven and set for a few minutes before serving.
Creamy shrimp orzo ✨

I somehow always keep orzo in the pantry so this dish can easily be whipped up if you grab some shrimp from the grocery store! It’s so creamy and feels fancy but easy enough to make for a weeknight 🥘 skip on the red crushed peppers if you don’t like spicy 🌶️ 

1 lbs shrimp
Olive oil
1 tbsp butter
1 tsp salt
1 tsp garlic seasoning
1/2 red crushed pepper
1 yellow onion, diced
12 oz cherry tomatoes
3 tbsp sun-dried tomatoes
1 cup heavy cream or coconut milk
3 cups chicken broth
1/4 cup grated parmesan cheese 🧀 
2 cups spinach 

1. Add olive oil to a large pan, medium heat, and let it heat up. Add shrimp, season with salt, garlic seasoning and crushed red pepper, and let cook for a few minutes each side until golden and mostly cooked through. Remove from pan and set aside.

2. Add some more olive oil to pan, add diced onion and sauté for 2-3 minutes before adding cherry tomatoes. Cook for 5 minutes until bursting and until they starten to soft. Add sun-dried tomatoes and stir. Crush tomatoes lightly by pressing down on them.

3. Add orzo to pan, along with cream and broth. Stir everything, add parmesan cheese and continue to stir. Cook for about 10 minutes until the orzo is cooked and most of the liquid has been absorbed. Stir often so that the dish doesn’t burn. 

4. Once most of the liquid has been absorbed, add spinach, and stir in. Once wilted, remove from heat and serve with parmesan.

1 lbs pasta, I used farfalle
1 pint cherry tomatoes
12 oz/340 g chicken sausage, I used sweet Italian
5 oz/150g garlic and herb cheese spread 🧄 
3 sticks (48g) bone broth powder, savory chicken 
4 cups water
1 tbsp minced garlic
1/2 cup sour cream
1/4 cup Parmesan cheese

1. Add dry pasta, sliced sausage, cherry tomatoes and cheese to an oven safe tray. 

2. Mix bone broth with water, and pour over dish. Add garlic. Bake in oven at 400F for 45 minutes - 1 hour. Pasta is done when it’s al dente.

3. Remove from oven, mix to combine, add parmesan cheese and sour cream. Mix again 🍽️
Ricotta tomato pasta 🍅

This must be the easiest way you can make ricotta pasta and it comes out soooo delicious. So creamy ✨ I love pasta dishes with arugula!

2/3 lbs spaghetti
1.5 cup cherry tomatoes 
1 cup arugula
1 cup ricotta
Juice from one lemon 🍋
1/2 cup heavy cream
2 cups chicken broth

1. Combine all ingredients in an oven safe tray.

2. Bake in oven for 35-45min at 400F. Check if pasta is al dente and liquid has been absorbed, and remove from oven. If liquid is not absorbed, cook for another 5 minutes.
Cheese zucchini skillet 🫕 

One skillet but all the flavors! This cheesy zucchini beef skillet with potatoes and bell peppers is a great super simple weeknight dinner. So nutritious, cheesy and perfect for meal prepping as well.

1 or 2 medium potatoes, about 2 cups diced
1 bell pepper
1 yellow onion
2 zucchini, diced 
1 lbs ground beef
1 can (15 oz) crushed fire roasted tomatoes 
1 can (15 oz) black beans, drained
1 can (15 oz) sweet corn
1 bag taco seasoning, I love @sietefoods 
1 cup shredded cheese 
Toppings: parsley, sour cream, hot sauce 

1. Peel and dice potatoes. Heat up a large pan medium heat, add olive oil and potatoes. Cook for 10-15 minutes. Stir often. 

2. Meanwhile potatoes are cooking, dice bell peppers, zucchini and onion. Add to pan, and combine with potatoes. Cook for another 5 minutes.

3. Add ground beef to the pan, combine with the other ingredients and let cook for a few minutes until beef is mostly browned. Add crushed tomatoes, black beans and corn, combine and add taco seasoning. Mix and cook for a few more minutes until potatoes are soft.

4. Top with cheese, cover, and let cook for another 3-5 minutes until cheese is softened.

This dish has all the classic enchilada ingredients—beef, cheese, vegetables, and sauce—except it’s made in a skillet for less cleanup and ready in just 30 minutes! Gnocchi and burrata 🤩

I’m obsessed with this creamy and flavorful gnocchi dish made with burrata and lima beans. Comes together SO quickly and perfectly for a meatless Monday or just a rainy day lunch 🌧️

Olive oil
1 tbsp butter
28 oz (800g) gnocchi 
2 cans, 30 oz (850g) lima beans or butter beans. Drain one can but keep and use the liquid from the other.
9 oz (225g) edamame beans
8 oz (227g) pesto
1/2 cup sour cream
2 tbsp minced garlic
1 ball of burrata

1. Add olive oil to a large pot over medium heat. Add some butter, and let melt before adding gnocchi. Sauté for 3 minutes, before mixing, and adding all beans, including the liquid from one of the cans 

2. Stir to combine everything, add pesto, sour cream and garlic. Mix and let cook for 10–15 minutes until some of the liquid has been absorbed. 

3. Break open the burrata and add to the pot. Bake in oven for 5 minutes at 375F. Remove from oven and stir. Add salt and pepper to taste.
Loving quick dinners with little prep time and little clean up! As you might know I’m obsessed with the Trader Joe’s spinach and artichoke dip and it makes this dinner super creamy! Let me know if you try it :)

2 packages rice and orzo pilaf @traderjoes 
1 package/12 oz cheddar chicken sausage 
6 oz baby spinach
1 spinach and artichoke dip
2.5 cups chicken broth
1/4 cup sour cream, optional

1. Place pilaf, chicken sausage, spinach, dip in a large Dutch oven or a deep baking dish. Cover with broth.

2. Bake in oven for about 50 minutes to an hour at 400F. Remove from oven and mix. Add some sour cream and combine.
Creamy shrimp orzo ✨

I somehow always keep orzo in the pantry so this dish can easily be whipped up if you grab some shrimp from the grocery store! It’s so creamy and feels fancy but easy enough to make for a weeknight 🥘 skip on the red crushed peppers if you don’t like spicy 🌶️ 

1 lbs shrimp
Olive oil
1 tbsp butter
1 tsp salt
1 tsp garlic seasoning
1/2 red crushed pepper
1 yellow onion, diced
12 oz cherry tomatoes
3 tbsp sun-dried tomatoes
1 cup heavy cream or coconut milk
3 cups chicken broth
2 cups dry orzo 
1/4 cup grated parmesan cheese 🧀 
2 cups spinach 

1. Add olive oil to a large pan, medium heat, and let it heat up. Add shrimp, season with salt, garlic seasoning and crushed red pepper, and let cook for a few minutes each side until golden and mostly cooked through. Remove from pan and set aside.

2. Add some more olive oil to pan, add diced onion and sauté for 2-3 minutes before adding cherry tomatoes. Cook for 5 minutes until bursting and until they starten to soft. Add sun-dried tomatoes and stir. Crush tomatoes lightly by pressing down on them.

3. Add orzo to pan, along with cream and broth. Stir everything, add parmesan cheese and continue to stir. Cook for about 10 minutes until the orzo is cooked and most of the liquid has been absorbed. Stir often so that the dish doesn’t burn. 

4. Once most of the liquid has been absorbed, add spinach, and stir in. Once wilted, remove from heat and serve with parmesan.
If you like a cheesy gooey high protein dinner look no further. This is SO good and so flavorful thanks to the soyaki sauce and the broth. 

Save this for an easy weeknight dinner!

2 bell peppers, diced
1 yellow onion, diced
4 scallions, cut up and separate white from green parts 
1 lb ground beef 
2 tbsp tomato paste
1/2 cup soyaki sauce 
1 cup basmati rice, washed and rinsed
2 cups beef broth, using @lonolifeinc powder broth here
1 cup Mexican cheese blend
Optional: serve with avocado 🥑

1. Add diced bell peppers and onion to a large pan in some olive oil over medium heat. Sauté for a few minutes before adding white parts of green onions and ground beef. Break up beef and mix every thing.  Add white parts of green onions.

2. Cook for a few minutes until beef starts to brown, then add soyaki sauce and tomato paste and mix to combine. Cook for another minute or two until the beef is almost fully cooked. Add rice and beef broth to pan. Mix to combine everything, then cook for 10-15 minutes on low heat with a lid until rice is done. Remove lid and stir a few times to make sure beef doesn’t burn. 

3. Remove lid, add half of the cheese and mix. Add the remaining cheese on top and add back lid for 30 seconds to let cheese melt.

4. Serve with avocado and green parts of green onions.

I feel like this is a parent hack and I’m not sure why haven’t made these before. My kids could easily eat chicken nuggets everyday of the week if I let them so why not make them at home easily made with simple clean ingredients? These are so great for meal prep and SO crispy and delicious 🤤 

1 lbs ground chicken
5 tbsp milk 
1/4 cup panko breadcrumbs
1 tsp garlic seasoning
1 tsp salt
1/2 tsp black pepper
Optional: 1 or 2 tbsp of honey (makes them a bit sweeter which kids loves) 🍯 
1 egg
3 Tablespoons melted butter

Breading:
1 cup panko bread crumbs
1/4 cup grated parmesan cheese

1. add milk and breadcrumbs to a bowl, let sit for a minute before adding seasoning. 

2. In a different bowl, add ground chicken and add milk mix. Mix everything using your hands. Scoop out about 1 tbsp and shape into nuggets. It helps a LOT it you wet your hands when shaping them.

3. In a bowl, whisk one egg. On a plate, mix 1 cup of breadcrumbs and cheese.

4. Brush each nugget with the whisked egg and then coat with breading mix.

5. Melt 1.5 tbsp of butter and brush each top side of nugget with the butter.

6. Bake in oven at 375F for 8 minutes. Remove from oven and brush with remaining 1.5 tbsp of butter, both sides of the nuggets.

7. Bake for another 7 minutes. Broil on high for 1 minute.
Stracciatella tomato gnocchi 🍅

1 lb gnocchi. I used a tomato stuffed one from @aldiusa 
12 oz chicken sausage, cut to small pieces
12 oz cherry tomatoes 🍅 
8 oz stracciatella, burrata filling
Drizzle of hot honey 🍯

1. Add gnocchi to a medium hot pan with some olive oil. Stir and cook until golden and cooked through. Remove from pan

2. Add some more olive oil to pan and cherry tomatoes and chicken sausage to pan. Cook until the sausage is browned and the to tomatoes are bursting. Add back gnocchi to pan.

3. Add stracciatella to pan and mix everything, drizzle with some hot honey
It’s soooo hot and humid on the east coast but I can eat these kinda meals all year around, especially with these thunderstorms showing up non stop ⛈️ this tomato pasta dish is incredible and perfect for romanticizing a weekday.

Olive oil
1 tbsp butter
2/3 lbs spaghetti
1 pint cherry tomatoes
3 tbsp sun dried tomatoes
2 tbs harissa pasta, mild 
Salt
1 tsp dried basil
1/2 cup heavy cream
1/2 cup sour cream
1/2 cup shaved Parmesan
1/4 cup mozzarella cheese
1/2 cup pine nuts 

1. Boil water and add pasta to a large pot. Cool until al dente.

2. While pasta is cooking, add some olive oil to a large pan. Once sizzling, add butter and let melt. Add cherry tomatoes and sun dried tomatoes, and let cook for 5 minutes. Add harissa pasta and mix everything. Season with salt and dried basil. Mix and cover with a lid for 5 minutes. Remove lid and lightly press down on the cherry tomatoes.

3. Add cream and sour cream and mix to combine. Cook for a minute then add Parmesan cheese. Mix, then pour in your pasta. Top with mozzarella and pine nuts before mixing one last time
Boursin chicken and rice bake 🧀

I almost didn’t post this cause it’s such a simple dump and bake dish but I’ve made it a million times and it’s so good! Save this when you need a quick  dinner 🥘 

1 cup of basmati rice, rinsed 
2 cups of shredded chicken
2 cups of frozen broccoli
1 cup of heavy cream
1 cup of chicken broth
1 Boursin cheese 
1 tsp garlic seasoning @tastefullysimpleinc 
Optional: grated Parmesan cheese 🧀 

1. Combine all do the ingredients in an oven safe dish and add Boursin in the middle. Cover with foil and bake in the oven at 400F for 45 min.

2. Remove from oven and let set for 5 minutes before stirring everything. Serve with Parmesan.
