Crispy tacos is a new favorite around here and I love that you can customize it so easily depending on what you have at home! For these I used ground beef but you could easily swap the beef for turkey or chicken! Olive oil spray 1 lb ground beef 1 package taco seasoning 🌮 @sietefoods 8 small corn tortillas 3 tbsp cheddar cheese spread with hatch chile 🌶️ @traderjoes 1 cup Mexican or cheddar cheese For serving: avocado, pico de gallo salsa 1. Cook beef in a pan in olive oil over medium heat, add taco seasoning and mix. Cook until cooked through. 2. Add a wet paper towel to a large plate, add your tortillas and cover with another soaked paper towel. Microwave for 30-60 seconds until the tortillas are a bit softer. 3. Spray a sheet pan with olive oil and line up the tortillas. Spread cheddar cheese on each tortilla, as well as add ground beef and top with shredded cheese. Carefully fold up each tortilla and spray with olive oil. I placed a wire rack on top, you can also use another pan. Bake in the oven for about 10 minutes at 375F until crisp. Don’t worry if they break! They’re still gonna be delicious.
