My Weekly Shop 🛍
I have to admit that by Friday my meal plans are done and the fridge is empty. Friday night and Saturday morning are always a bit of a scramble to plan what we are going to eat, and get milk! But with the chaos comes a silver lining I secretly 🤫 quite like choosing what we are going to eat spontaneously and based on how we are all feeling 😉
.
On Monday I get a big online order which includes all my kitchen cupboard ingredients and basics, household stuff too. I then try and buy fresh produce a couple of times a week, ideally when I’m out and about already with the pram and George in tow. But, by the weekend my organisation levels drop. I make some last minute decisions about what I’m going to cook and mostly shop locally, I  experiment with new ingredients, or a new recipe I have wanted to try for ages. And I can make foods that take longer to cook, so at this time of year slow cooking is king. The key is it works for me and that’s the thing about cooking for your family: if meal planning isn’t your thing don’t beat yourself up about it. Even the most confident cooks, me included, know that cooking for a family is a tough job! 😅 Find a pattern that works for you and if you can share the load and get everyone involved all the better. It’s a team effort 👏🏻

Healthy Baked Beans 🍅🍞
These will make you forget about the beans from a can: after school supper or breakfast. What days comfort food more than beans on toast? We shot this last week for you tube, as one of our must-try recipes for Autumn. Really you make a lovely naturally sweet tomato base and add creamy white beans, couldn’t be simpler 💯

You need ~
1 small onion, peeled and diced
2 tablespoons olive oil
2 cloves of garlic, peeled
10-15 cherry tomatoes, washed and halved
1 teaspoon smoked paprika
x2 tins organic plum tomatoes 
1 tablespoon tomato purée 
x2 tins butter beans, or cannellini beans, drained and rinsed (these are precooked)
sprig of thyme
1 tablespoon maple syrup (optional)
bread/ or toast, to serve

Homemade Chicken Nuggets 🍗

My top tip ➡️ marinate the chicken pieces for 2-3 hours in the fridge, this really tenderises the meat and is well worth the effort. For smaller children you can omit flavourings (like garlic, lemon zest and paprika); and just keep it simple with a basic yogurt marinade. Plenty more marinade ideas, breadcrumb options and other inspo on the website

For the basic recipe you need ~
🌿x4 free range chicken breasts, taken off the bone and skin removed
🌿2 tablespoons natural yoghurt
🌿1 garlic clove, peeled and crushed
🌿1/2 teaspoon paprika (optional)
🌿1 egg, lightly beaten
🌿200g breadcrumbs
🌿1 tablespoon olive oil
.
🍗Cut the chicken breasts into chunks or strips,
🍗Marinade the chicken: in the yoghurt crushed garlic, paprika: for 30 mins to 1 hour minimum
🍗Prep the bread-crumbing assembly line: flour, egg and breadcrumbs
🍗 Add the chicken pieces to the egg and coat, then add to the breadcrumbs and coat evenly in the breadcrumb mix
🍗 Place on a tray, drizzle with olive oil and bake at 180°C,  for 20 minutes approx. Drain on kitchen paper and serve warm with lemon wedges and a dip of your choice.

🥕Baby Lentils and Vegetables 🥕
These hearty lentils are delicious, we eat this recipe as a family: I just blend some for my baby son and then serve the rest (unblended) as a soup, adding just a little more seasoning. It is packed full of vegetables and lentils provide a great source of protein for your baby

🥄When introducing lentils, you may find that they make your baby windy or gassy: so serve a small portion to start with and note and reactions in your baby
.
To make this you need~
1 tablespoon olive oil
½ small leek, washed, trimmed and diced
½ small onion, peeled and diced
2 carrots, washed, trimmed, peeled and diced 
½ celery stalk, washed, trimmed and diced
2 sweet potatoes, washed, trimmed, peeled and diced
2 tomatoes, washed (optional)
60g split red lentils, rinse in running cold water and drain
500ml homemade vegetable stock, or no added salt stock
250ml boiled water, for blending

Oat Cookies 🍪
Weekend oats to keep energy levels up 💪🏻 these are great to make with any little helpers too. I store them in an airtight container so we have them on standby all week. My daughters favourite afternoon snack at the moment 💕

You need ~
80g unsalted butter
1 heaped tablespoon brown sugar (OR, 1/2 banana mashed OR 1.5 tablespoons maple syrup), optional
1 organic egg
120g self raising flour
90g oats (normal porridge oats, not rolled or jumbo)
.
For flavour ~
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon vanilla extract 
blueberries/ raspberries/ jam
.
Suitable 1 years + only
.
To make ~
🍪 Take the butter out of the fridge, to completely soften
🍪 In a bowl combine the soft butter, sugar, beaten egg and vanilla extract
🍪 Add the flour, oats, cinnamon, and nutmeg
🍪 The mixture will form a biscuit dough
🍪 Line a baking sheet, and form the biscuit dough into 12-15 mini balls. Place on the baking tray, well spaced out and press down each biscuit ball with a fork to form a little cookie
🍪 I press a fresh berry or a tiny bit of jam into the top of each cookie (this is totally optional - they are just as good without)
🍪 Bake until cooked through 15 mins approx, remove and cool on a wire rack at 180 C fan oven

Beetroot Risotto 🥣
This is a lovely first risotto; it is also the first risotto I made for my son George. He loved the flavour: both the beetroot puree and the homemade stock combine beautifully. If you are hesitant about using beetroot don’t be, it isn’t a strong flavour and it is packed full of nutrition.  I make the beetroot puree and homemade stock in advance; otherwise there would be just too many steps to make this recipe easy enough to fit into one manageable day. But, both the puree and the stock (vegetable or chicken) are really useful to have in the freezer, when you are weaning. They can be added to so many other recipes 😉
.
This risotto is also complex enough to make for the whole family. Go to the @mimisbowl website and see the recipe section. I have included family size quantities, if you want to make this for the whole family. If you can plan meals where everyone can eat together, it does make life easier 😅 If you do have leftovers you can bread crumb small balls of cold risotto (flour > egg > breadcrumbs) and fry in oil/ bake in the oven to make arancini. Just make sure the rice is piping hot all the way through, before serving 🥰

This half term I have been having a blitz at home: we have been sorting out the house (which has been sort of left since George was born 🤪). George’s room has had a makeover, the garden has been sorted out and we have been sorting through old toys and clothes, setting aside a load to donate

Oat Cookies
New recipe alert 🚨 crumbly buttery oat cookies. I wanted to make something for the sweet treat @mimisbowl recipe archive and these biscuits are yummy. Everyone in the family loves them. I add 1 tablespoon of brown sugar but that’s totally optional, you could replace with 1/2 mashed banana if you prefer, or try a tablespoon of maple syrup. I made these for my little girl yesterday, she loves them after an afternoon of games 💕

You need ~
80g unsalted butter
10-15g brown sugar (1 heaped tablespoon), optional
1 organic egg
120g self raising flour
90g oats

For flavour ~
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon vanilla extract

Baby Vegetanle Pasta Sauce 🍝
This lovely veggie packed pasta sauce, is incredibly versatile. Both my children (8 months and 4 years) love it. For my baby boy, I mix it through baby pasta shells and for my daughter I use it to top pizzas, roasted fish or as a dip for chicken strips. It really transforms so many recipes. This is the version I make which is baby friendly. It is packed full of goodness and freezes beautifully

🍅This recipe does contain tomatoes, which can be acidic for some babies. So you can choose to omit these entirely, if trying for the first time. Or just add 1 of 2 tomatoes to reduce the ratio of tomatoes in the sauce
.
📍As always, our paediatric dietician Bianca Parau advises that you try each ingredient separately, so there is no reaction to any of of the ingredients, before offering this dish
.
❄️You can freeze this sauce for up to 3-months, I use multi portion trays to do this, and then defrost as needed 👍🏻

Quick Biscuits 🥕
These no-added sugar biscuits are made with carrot juice (a fun twist on the No Added Sugar Apple Biscuits). You can make these with your little ones too, if you are looking for #baking inspiration 🥣

Falafel Bites 🥙 
Recipe idea for #meatfreemonday today: quick and easy falafel bites. Four ingredients + some flavourings 💃🏻 We enjoy with a yogurt dip & my daughter (4.5 years) likes these broken up into a pitta pocket with some veggies 🙌🏻

You need ~
400g can of chickpeas*, drained
1 onion, finely diced 
1 garlic clove, crushed
1 small organic egg (can substitute with 1-2 tablespoons of flour)
.
Flavours (optional) ~
1 teaspoon cumin
1 teaspoon coriander
1 tablespoon parsley, chopped
1 tablespoon chives, chopped
Olive oil for cooking
.
To make ~
🥙 Preheat the oven to 180C (fan)
🥙Gently fry the onion in some olive oil, until soft (5-8 mins), add the crushed garlic and cook for a further 1-2 mins. Set aside to cool
🥙In a blender blitz the: chickpeas, onion & garlic mix. Pulse until you have a texture you like.
🥙 Tip the ingredients into a bowl and combine with the egg and flavourings (if using)
🥙Shape the mix into patties of a size you like: I prefer smaller ones. If the mix feels to wet you can add a tablespoon or two of flour, this depends on the chickpeas!
🥙 Fry the falafel in a little olive oil until golden, a few minutes a side. Then transfer to an oven and cook through for 5-10 minutes
🥙 & serve 💚

Easy Orzo Pasta 🥣
Orzo pasta, shaped like a super sized grain of rice, but it’s pasta! A really useful kitchen cupboard standby and quick supper. My top tip is to cook it in stock: so it absorbs lots of flavour 👊🏻 I add roasted butternut squash, cooked peas, shredded spinach, roasted cherry tomatoes... really whatever I have to hand. Easy kids food that’s filling and gets dinner on the table pronto 🙌🏻

For the squash version, you need ~
🌿4 tablespoons olive oil
🌿200g butternut squash, peeled and cubed
🌿1 onion, peeled and finely diced
🌿1 small garlic clove, peeled and whole
🌿300g orzo pasta
🌿800ml - 1litre no salt stock*, warmed through in a pan until hot, add more depending on the consistency you like
(*I use homemade chicken, or vegetable stock ~ recipe on the website)
🌿Parmesan to taste (optional)

Creamy Fish Pie 🐟
This is a comforting “fish pie” for your baby and one of George’s favourite recipes. I bought some lovely white fish yestertoday from the fish monger and I will be making this for him tonight. It uses a creamy white sauce to blend poached cod and cooked vegetables. Cooking the milk, will aide digestion 🙌🏻

If you have a toddler, or other bigger children make the same and instead of blending the sauce, top with mashed potato and cook in the oven for 15 minutes until golden and piping hot 🥧 
.
Recommended 8months + approx.

🥛Dairy (full fat) can be used in cooking form 6 months onwards, but not as a 
drink. If there is a history of dairy allergy, then substitute with a dairy-free alternative (which is suitable)
🌾For children on a gluten free diet substitute plain flour with gluten free flour. 
🐟With proteins such as fish it is recommended you introduce from 6 months onwards. Extra care should be taken with atopic history cases, speak to your health care advisor

✏️Shopping List ~
1 tablespoon olive oil
1 small leek, washed and trimmed (100g approx.)
1 carrot, washed, trimmed and peeled (80g approx.)
150ml whole milk
1 bay leaf
300g fish, (white fish sustainably caught, such as cod or haddock), cut into 5-6 smaller pieces to ensure it cooks through
200ml water
35g butter (can substitute with a few tablespoons of olive oil)
2 tablespoons plain flour (gluten free if preferred)

Turkey and Apricot Burgers 🍔 
Switching beef mince for turkey mince in your beef burgers makes them so much lighter. This is a great mid-week supper option. I’m going to try a variation of this as finger food meatballs for George soon! They won’t dry out with the addition of grated carrot and dried apricots add a hint sweetness (so they can be eaten just as they are without a mountain of added sauces 🙄). My top tip is to finely dice all the ingredients so that the dried fruit spreads evenly throughout the mix 🥣
Recipe makes 10-12 mini burgers
.
Ingredients 
500g organic turkey mince 
1 small onion, peeled and finely diced 
1 large garlic clove, peeled and crushed 
1 small carrot, peeled and finely grated 
50g dried apricots, finely diced 
1/2 dried oregano 
1 organic egg 
2 tablespoons olive oil, for cooking
.
To cook ~
🍑Preheat the oven to 180C (fan oven)
🍑Take 1 tablespoon oil and gently cook the onion, to soften it for 8-10 mins
🍑Next add the crushed garlic and cook for 2 mins. Remove the onion and garlic mix from the heat and cool
🍑Once cool combine the onion mix with the turkey mince, finely grated carrot, finely diced apricots, egg and chopped parsley
🍑Using a spoon allocate equal size mini burgers
🍑Take a large frying pan add 1 tablespoon olive oil and brown the burgers in batches (2-3 mins), remove to a baking sheet
🍑Place the burgers in the hot oven to cook through (this will depend on their size) but for mini sized burgers 20 minutes approx. in a hot oven. Check the burgers are completely cooked, with no sign of pinkness in the meat
🍑Remove from the oven, drain on kitchen paper and serve

Ricotta, Vanilla and Blueberry Pancakes
These are Mimas favourite weekend pancakes, I have adapted them from a Nigella recipe. But every time I story these I get so many request for the recipe. So in time for pancake day: here it is, or my version. I warn you they are addictive 😁 The ricotta makes the centres soft and creamy and whisking the eggs lightly keeps them light and fluffy ☁️

You need
250g tub of ricotta cheese
125 millilitres semi skimmed milk
2 organic eggs, separated
100 grams plain flour
1 teaspoon baking powder
1 teaspoon vanilla extract
125g blueberries
vegetable oil for cooking
.
To cook ~
🥞In a bowl combine the ricotta, milk, vanilla extract and egg yolks, break up with a spatula until smooth
🥞Next add the flour and baking powder
🥞In a separate bowl whisk the egg whites by hand, for just 2 mins or so, just so they are softly firm
🥞Fold into the pancake mix, lightly, to retain the air and keep the mix light and fluffy
🥞 Finally, food through the whole blueberries
🥞Heat a large frying pan and lightly brush with veg oil
🥞 Drop in a spoon of batter, cook until bubbles appear in the surface, then flip them over and cook for another minute. They should be lightly golden on both sides
🥞 Serve with more blueberries and a little maple syrup ☺️

Crispy Fish Cakes 🐟
Fishcakes are such an easy standby meal and a great way of using up left over mashed potato and cooked fish. Fishcakes can also be made ahead and then cooked as you need them. They freeze well too. Sometimes I breadcrumb the fishcakes and sometimes I don’t bother and cook them without, they will be just as 
good and gluten free 🙌🏻 They have proved really useful recently as George can have some baby mashed potato (unseasoned) and flaked fish and Mima will eat the same as a little fishcake #onefamilyonerecipe

You need ~
100g sustainable firm fish fillet:
haddock, halibut or salmon, skinned 
and pin-boned by your fishmonger
50ml whole milk
200g potatoes (any variety good for 
mashing)
25g butter
3 tablespoons plain flour
1 organic egg
handful of breadcrumbs of your 
choice
butter and oil, for frying
a potato ricer, or masher
