Falafel Bites 🥙 Recipe idea for meatfreemonday today: quick and easy falafel bites. Four ingredients + some flavourings 💃🏻 We enjoy with a yogurt dip & my daughter (4.5 years) likes these broken up into a pitta pocket with some veggies 🙌🏻 . You need ~ 400g can of chickpeas*, drained 1 onion, finely diced 1 garlic clove, crushed 1 small organic egg (can substitute with 1-2 tablespoons of flour) . Flavours (optional) ~ 1 teaspoon cumin 1 teaspoon coriander 1 tablespoon parsley, chopped 1 tablespoon chives, chopped Olive oil for cooking . To make ~ 🥙 Preheat the oven to 180C (fan) 🥙Gently fry the onion in some olive oil, until soft (5-8 mins), add the crushed garlic and cook for a further 1-2 mins. Set aside to cool 🥙In a blender blitz the: chickpeas, onion & garlic mix. Pulse until you have a texture you like. 🥙 Tip the ingredients into a bowl and combine with the egg and flavourings (if using) 🥙Shape the mix into patties of a size you like: I prefer smaller ones. If the mix feels to wet you can add a tablespoon or two of flour, this depends on the chickpeas! 🥙 Fry the falafel in a little olive oil until golden, a few minutes a side. Then transfer to an oven and cook through for 5-10 minutes 🥙 & serve 💚 . 📍 *Bianca, our partner dietician, reminded me chickpeas are a high allergen food, they should be tried on their own.
