Don’t you just love going through old recipes, or is that just me? I’m from the South, so we have more than a few of these old church lady cookbooks hanging around, and they are full of pure gold! Some of these old recipes are questionable, but some are just plain delicious! This one for Party Rice is no exception. Written by Mrs. Lucille Bullock in the Foods for Feasting cookbook published in the East Texas Pineywoods in 1981, this recipe will knock your socks off! I can see why it’s called Party Rice. This is definitely one of those must haves for any dinner party! RECIPE BELOW ⬇️ Ingredients: 2 cups rice (I used jasmine rice) 1 can beef broth 1 can beef consommé 1 stick butter 1 onion diced 1 cup water Option: Two diced chicken breast, marinated in 1/4 cup olive oil and 1 package onion soup mix. Preheat your oven to 350. In a saute pan, melt your butter and cook your onions until they are translucent. In your baking dish, add rice and all other ingredients. Mix it well, and then add your butter and onions to the baking dish. Cook UNCOVERED (yes, that’s how Mrs. Bullock did it!) for 1 hour. Take out of the oven, fluff with a fork and enjoy!! LTKHome
