Ingredients:
• 3 lbs Yukon gold potatoes (thinly sliced)
• 2 cups heavy cream
• 1 cup whole milk
• 3 cloves garlic (minced)
• 1 tsp kosher salt
• 1/2 tsp fresh cracked black pepper
• 1/2 tsp fresh thyme (or 1/4 tsp dried)
• 2 cups shredded Gruyère cheese
• 1 cup grated Parmesan
• 2 tbsp butter (for greasing the dish)

How to Make It:
1. Preheat oven to 375°F and butter a baking dish.
2. Slice potatoes super thin (a mandoline makes this easy). Coat the sliced potatoes in your parmesan cheese in a bowl.
3. In a saucepan, warm cream + milk + garlic + thyme (don’t boil, just warm it up).
4. Layer potatoes in the dish, sprinkling Gruyère cheese between layers.
5. Pour the warm cream mixture over the top and gently press down so everything’s coated.
6. Cover with foil and bake 45 minutes.
7. Remove foil and bake 25–35 more minutes until golden, bubbly, and the potatoes are fork tender.
8. Let it rest 10 minutes before serving (this helps it set up perfectly).

• Egg noodles
• Sour cream

HOW TO MAKE IT:

Heat a pan and sear the cubed chuck roast until deeply browned on all sides. Don’t rush this part, that browning is where the flavor starts. Add sliced mushrooms directly to the pan, then stir in the onion soup mix. Pour in the French onion soup, beef consommé, and cream of mushroom. Add a splash of water and black pepper, then let it simmer while you cook your egg noodles. Right before serving, stir sour cream into the beef mixture until creamy. Toss in the cooked egg noodles and finish with parmesan cheese on top.

• 8 frozen hashbrown patties
• 1 1/2 cups diced leftover ham
• 6 eggs
• 1/2 cup heavy cream
• 1/2 cup shredded cheddar
• Salt + pepper

How to make it:

Grease a 9x13 baking dish and lay the frozen hashbrown patties in a single layer.Scatter the diced ham on top.In a bowl, whisk together the eggs, heavy cream, salt, and pepper.Pour that over the hashbrowns and ham, then sprinkle cheddar on top.Cover with foil and bake at 400°F for 25 minutes.Uncover and bake 5–10 more minutes, until the edges are golden and the cheese is bubbly.
