Spread the chicken in a thin layer over your pita bread, and top with olive oil. Cook the chicken pita face down for on medium high heat for about 10 minutes. Flip and cook for 2 minutes, just to get good flavor on the pita. Remove from the griddle, and cover. While those are resting, mix up your bagged salad and make your sauce.
