It’s soooo hot and humid on the east coast but I can eat these kinda meals all year around, especially with these thunderstorms showing up non stop ⛈️ this tomato pasta dish is incredible and perfect for romanticizing a weekday. Olive oil 1 tbsp butter 2/3 lbs spaghetti 1 pint cherry tomatoes 3 tbsp sun dried tomatoes 2 tbs harissa pasta, mild Salt 1 tsp dried basil 1/2 cup heavy cream 1/2 cup sour cream 1/2 cup shaved Parmesan 1/4 cup mozzarella cheese 1/2 cup pine nuts 1. Boil water and add pasta to a large pot. Cool until al dente. 2. While pasta is cooking, add some olive oil to a large pan. Once sizzling, add butter and let melt. Add cherry tomatoes and sun dried tomatoes, and let cook for 5 minutes. Add harissa pasta and mix everything. Season with salt and dried basil. Mix and cover with a lid for 5 minutes. Remove lid and lightly press down on the cherry tomatoes. 3. Add cream and sour cream and mix to combine. Cook for a minute then add Parmesan cheese. Mix, then pour in your pasta. Top with mozzarella and pine nuts before mixing one last time
